Summery Seafood Recipes

You only have to watch one summery seafood episode of Diners, Drive-Ins and Dives on the Food Network, to wish you had Guy Fieri’s job – traveling the country tasting yummy restaurant food. A recent episode had our mouths watering as we watched Chef Nico Chaize stuff moonfish with crabmeat and drizzle it with watercress cream sauce. It made us want to gather our own summery seafood recipes to enjoy in the season of grills and outdoor thrills!
Grilled Seafood and Sauces
While we may not have access to an opah or moonfish at our local market, you can always get a side of salmon and like the chefs at the Food Network, stuff it with creamy sweet corn and bacon and smear it with cilantro or basil-herbed butter. Watch Bobby Flay grill tilapia and top with a lemon, wine and caper butter sauce. (Are you getting the hint that the sauce is the secret? Us too!)
If you like a few carbs with your seafood — the flat linguini-type — take a look at this grilled seafood dish from the Food Network. Katie Lee starts her grilling party with shrimp, scallops and small clams to combine with marinara sauce for a familiar-yet-not pasta entrée.
Combo Platter Seafood
You’ve heard of low-country boil, right? Trisha Yearwood’s simple recipe combines one half-cup of crab boil seasoning (like Zatarain’s) with red potatoes, sweet onions, pork sausage links, ears of corn cut in half and shrimp. Everything is floated in a stockpot filled with water and boiled for five, 10 and 15 minutes – note when to add what – drained and served on a platter! Or put foil packets of the ingredients together like Katie Lee and grill them! Katie adds clams, andouille sausage, scallions and butter to the packets with the other usual suspects and serves with grilled, crusty bread.
